Lavender–Lemon Shortbread Cookies
Ingredients:
- 1 cup (225 g) softened butter
- ¼ cup (60 ml) whipping cream
- ½ cup (100 g) sugar
- 2 cups (250 g) flour
- 1 tbsp dried culinary lavender (lightly crushed)
- Zest of 1 lemon
- A pinch of salt
Instructions:
Preheat oven to 350°F (175°C). Beat butter, whipping cream, and sugar until light and fluffy. Add flour, lavender, lemon zest, and salt, and mix into a soft dough. Roll into a log, chill for 20 minutes, slice into ½-inch cookies, and bake for 10–12 minutes until edges turn lightly golden.
Optional Frosting:
Whisk ¼ cup (60 ml) whipping cream with ½ cup powdered sugar and a touch of lemon juice for a delicate glaze. Brush lightly over cooled cookies.
